FrenchGardenHouse Lobster Salad: What to Make for a Summer Dinner
LobsterSaladDinner It seems incredible that it's already summer, did spring fly by for you, too? After our boat picnic for my husband's birthday with the family, and eating cake with everyone back at home, we were left with just the two of us for dinner later that night. We spent such a grand time on the water, and after thinking for a while and looking through recipes, I came to the conclusion that this would be the perfect dinner ending of the day: FrenchGardenHouse Lobster Salad. lobstersalad4 You can cook a whole lobster, but I will admit I'm a little queasy about that, not to mention that in my part of the country, the lobster needed for a salad like this comes to around $55.00 at Bristol Farms. So I buy a bag of frozen langostino, which isn't actually lobster but meat from a "squat lobster," which, in addition to having a not-so-nice-sounding name, is more closely related to a crab. But…it tastes very similar to lobster, and in a salad it's delicious! lobstersalad11 If you are lucky enough to live in the part of the country where fresh lobster doesn't cost an arm and leg, then lobster is preferred. Here is the easy, easy recipe: FrenchGardenHouse Lobster Salad
  • 1 lb. cooked lobster or langostino
  • 1/3 cup mayonnaise
  • 1 or two tablespoons mustard {I use Champagne Mustard from HoneyBaked}
  • 2 teaspoons fresh lemon juice
  • ¼ cup very finely chopped celery
  • Pinch of salt
  • Freshly ground black pepper
How To:
  • In a large bowl, combine mayonnaise, lemon juice, chopped celery, and mustard, stir together. Add salt and pepper to taste. I add a few drops of hot sauce, but it's optional.
  • Once you love how the dressing is seasoned, gently add the lobster or langostino meat, and mix.
  • Cover and refrigerate until you are ready to serve, at least 1 - 2 hours, as that gives the flavors time to mix together.
  • Serve on a bed of fresh, baby green lettuce.

Real linen napkins add luxury to every meal! lobstersaladtable3 You can also put this on buttered, toasted rolls for a lobster roll. I can't eat wheat, and the gluten free buns don't really do it for me, plus, we are always looking for fresh, healthy meals here. But if you want carbs, the rolls are just delicious too! I served the salad with simple croissants {for Mr. FGH} and champagne. Melon for dessert.
