ROASTED GRAPE & ARUGULA SALAD
Roasted-grape-arugula-salad You know those fantastic, light and beautiful salads they serve in luxury spas and restaurants? Those salads that leave you wanting more? This is one of those. This salad is delicious for lunch or dinner, and it’s a great one to bring to a dinner party, too. This is the salad I'm serving for Easter Brunch {really lunch} If you've never roasted grapes before, you are going to love it. Roasting grapes brings out their sweetness even more. grapes-for-roasting After you toss them with a little olive oil and balsamic vinegar and quickly roast them in the oven, they are delicious, sweet, and slightly acidic. heaven. They are the perfect balance for the peppery arugula and the slightly salty feta cheese. A light dressing of olive oil and lemon juice, salt and pepper, and this salad is a more than welcome addition to any meal. On a warm summer's night, we've eaten this salad for an al fresco dinner, together with shrimp. arugula ROASTED GRAPE, ARUGULA AND FETA CHEESE SALAD {Adapted from Cooking Light.} INGREDIENTS: For the roasted grapes: 1-1/2 cups seedless red grapes 2 tsp. good olive oil 1 Tbsp. balsamic vinegar For the salad: 4 oz. arugula {I leave mine whole but you can chop if you like that.} 1/4 cup toasted walnuts, chopped 2 tsp. lemon juice 1 tsp olive oil 1/4 kosher salt ground pepper {I use a grinder, just sprinkle on as much as you love!} 1/4 cup or more feta cheese cut in blocks, or buy the crumbled, easy and even better! salad-grapes DIRECTIONS: Preheat oven to 450 degrees. 1. Combine: grapes, 2 tsp. olive oil and 1 Tbsp. balsamic vinegar all together on a baking sheet lined in foil. Bake at 450 degrees for about 10 minutes. Let grapes cool for 5 minutes. 2. Whisk 2 tsp. lemon juice, 1 tsp. olive oil, salt and pepper in a small bowl. 3. Place arugula in salad bowl, add walnuts and feta. Pour dressing over, toss. Serve. Yields four servings. Serve in a large bowl, or sometimes I love how a salad looks on a large antique platter. ENJOY! Let me know if you make this and what you think. Looks delicious! I’ve never tried roasting grapes, but have done roasted plum tomatoes (halved), they are wonderful! I’m looking forward to trying the roasted grapes & salad. The suggestion of shrimp, sounds great, too!
