CELEBRATE SUMMER | WATERMELON SALAD
What are your favorite summer memories? Mine are being made now...with our annual birthday celebration for John, my husband, which is this weekend. I'm trying my best to build fun summer family memories for my children and grandchildren around summer entertaining. {And if I'm honest, for me. I'm not a huge fan of summer, I come alive again once the first days of fall roll around.} I do love being outdoors, and eating outside while the temperatures are not too hot. Living near the ocean, we have a beautiful long season of perfect weather, with that little ocean breeze that cools the air just slightly. Summertime is layered with nostalgia, the 4th of July, fireworks, watermelon, beach days. Salute the warm, glowing days of summer and celebrate entertaining with patriotic colors of red, white and blue. I have lots of stylish, French serving pieces, French Country checked dishes, glassware and all sorts of other beautiful ways for you to style your outdoor entertaining with a French flair! While you are enjoying this gorgeous weather, try a new salad. One of my newest favorite summer salads was created by my friend Lisa, of DeliciousTable fame. Refreshing, easy, and oh! so good. Give it a try, with the feta or without, it's one of summer's divine pleasures.

Watermelon Mint Feta Salad

Cool Refreshing Watermelon Mint Feta Salad served in a watermelon as the salad bowl. Serve chilled on a hot day.

WATERMELON FETA SALAD

6-8 servings

INGREDIENTS

  • 1 small watermelon, washed
  • 1/4 cup good olive oil
  • 1 cup fresh mint leaves, minced (plus extra for garnish)
  • 2 oranges, zest and juice
  • 2 limes, zest and juice
  • salt and pepper to taste
  • 4 oz. crumbled feta cheese, optional (8 oz for a larger watermelon)
DIRECTIONS
  • Wash skin of watermelon in cool water and a splash of vinegar.
  • Slice a small portion off the bottom of the watermelon so it sits flat on the counter.
  • Cut the top off, about 2 ” down to form your salad bowl.
  • In a medium bowl, whisk olive oil, orange zest and juice, lime zest and juice, mix in mint, and feta cheese.
  • Using a small melon baller, scoop out all the watermelon, into a the medium bowl, leaving just the watermelon rind. Pour any remaining watermelon juice into bowl. Toss to combine all ingredients well.
  • Place the watermelon salad back into the carved out watermelon, and garnish with mint sprigs.
  • Keep covered with plastic wrap in refrigerator until ready to serve.
  • Serve chilled.

Hi Lidy, The salad looks delicious, I shall have to try it. I wish I had your summers, they sound divine. The best time to be outside here in Texas in the summer is before 10am. After that, with the humidity, it is just too hot, even in the shade-and humid and mosquitoey to boot. Thanks for some cute styling ideas and hope you enjoy your summer. Diana
