ROASTED GRAPE & ARUGULA SALAD

Roasted-grape-arugula-salad

You know those fantastic, light and beautiful salads they serve in luxury spas and restaurants? Those salads that leave you wanting more? This is one of those.

This salad is delicious for lunch or dinner, and it’s a great one to bring to a dinner party, too.  This is the salad I’m serving for Easter Brunch {really lunch}

If you’ve never roasted grapes before, you are going to love it. Roasting grapes brings out their sweetness even more.

After you toss them with a little olive oil and balsamic vinegar and quickly roast them in the oven, they are delicious, sweet, and slightly acidic. heaven.

They are the perfect balance for the peppery arugula and the slightly salty feta cheese.  A light dressing of olive oil and lemon juice, salt and pepper, and this salad is a more than welcome addition to any meal. On a warm summer’s night, we’ve eaten this salad for an al fresco dinner, together with shrimp.

  12. I do love roasting things, but I’ve never tried grapes before. Tomorrow, I promise. Not many fresh greens around here yet but perhaps I can find a wilted lettuce or something. Oh spring, please start springing….

  13. Lidy, this salad sounds delish. This time of year I really look forward to salads. Love the hash brown recipe you posted too! Spring seems to have finally settled in here this week! Envy you eating outside already!

    Lidy,
    I have never heard of roasted grapes,they sound so yummy! I love any sort of salads . Please enter me into the drawing for the sweetest pink bowls with the little birds.
    Thanks, Denise

  16. Hi Lidy,
    I’m starting my 30 day diet tomorrow, and this looks like a perfect recipe for me to try on my diet. I love grapes, and though I have never tried them roasted, they sound delicious. Feta Cheese is also one of my favorites. I think I would preder the Arugala whole rather than chopped. All of the salad recipes on this diet call for the olive oil and balsamic or plain vinegar in the same proportions. Wish me luck on my diet that it turns out to be successful. Hopefully I can get my husband to join me on this Diet Journey.
