Luxury White Chocolate Pumpkin Gourmet Popcorn




Have ever bought a small bag of gourmet popcorn? Those decadent, rich {and expensive} gourmet popcorns drizzled with chocolate and so beautifully wrapped? I have a wonderful recipe for that! And I’m sharing it with you. This is easy to make, but I warn you now, do not leave it out in a huge bowl too long before wrapping it up, otherwise I can’t be responsible for you, eating the whole bowl yourself. It is decadent, and addictively delicious!






Just in time for Thanksgiving, you can make this quickly, bag it up individually, and add a gorgeous ribbon.  Voila! A beautiful treat to serve at your next event or party, or to wrap beautifully and present to neighbors or friends at holiday time.









Sometimes I take the time to drizzle it beautifully, in a stripe pattern, other times I don’t, and it doesn’t look as pretty, but the taste is the same, amazing.






White Chocolate Pumpkin Gourment Popcorn

Popcorn {about 10 cups popped}
1/2 cup unsalted butter
1/2 – 1  cup packed brown sugar
1 t pumpkin spice
1/2 tsp salt
1 tsp vanilla extract
1/4 tsp baking soda
5-6 oz chopped white chocolate or white chocolate chips

1. Preheat oven to 250 degrees.

2. Pop popcorn, put into a huge bowl. Please remove all unpopped kernals.

3. Melt butter in a saucepan over medium heat. Stir in brown sugar, 1 t pumpkin spice, and salt. Bring this caramel mixture to a boil,  allow to bubble 4 minutes without stirring, but be careful not to burn. Remove from heat.

4. Stir in vanilla and baking soda, keep stirring until mixture is thick and glossy.

5. Pour half of this caramel sauce over your popcorn and toss several times. Add the other half of the caramel sauce and toss popcorn until evenly coated.

6. Spread popcorn onto a large rimmed cookie sheet {I line with parchment paper or foil }; bake in pre-heated oven 1 hour, stirring popcorn every 15 minutes.

7. Allow mixture to cool completely.

7. Melt white chocolate on 50% power in 20 second intervals, stirring after each interval until melted and smooth. I use my pyrex measuring cup for this. You can also melt in double boiler, whatever is easier for you.

8. Pour melted white chocolate into a ziploc bag and snip a very small tip from a corner. Squeeze to  drizzle popcorn with melted white chocolate. Let it set at room temperature.








Bag popcorn in individual gift bags, little bakery or take out boxes, or serve in glasses lined with parchment paper squares at your party.
