Favorite Chicken Curry Soup

Here is my favorite recipe for a flavorful soup for you to make now. So easy, so good, and with bread and a salad, even your husband will call it dinner. It’s our Favorite Chicken Curry Soup! The little people love it, our neighbors joke that they want to “be sick” so I’ll make it for them. Warm, comforting, and so easy.  You can also make it ahead, freeze it, and heat it up in your slow cooker on a crazy busy day during autumn.

Autumn is my happy place. You probably have guessed that if you’ve read me for any length of time. I love to decorate the kitchen with colorful linen towels, I buy myself {and you!} new linens for the table, and I light a candle and just feel all cozy and warm. I visit our local farmer’s market and stock up on “winter” vegetables.  And I’m more inspired to cook. You, too?

 

Favorite Chicken Curry Soup

 

This chicken curry soup is easy to make, it uses simple ingredients to create a most warming soup that everyone loves! I’ve never met anyone who didn’t love it.  This soup will leave you feeling so warm, so cozy, so good. Perfect for colder days.

You chop a few onions into small bits, and 2 cups of carrots, too. {or totally cheat and buy the bag of shredded carrots if you are in a hurry.} Throw unsalted butter in  large stock pan, and add the chopped onions, the carrots, and the curry powder. Let this go on low until the vegetables are tender, stir once in awhile.

The best kind of comfort food you can make yourself, in no time. Add in chicken stock, parsley, rice, and chicken. Simmer for 25-30 minutes until your chicken is done. I often add in garlic, because garlic is tastes good and is good for you. : )

This soup is so easy to make with easy-to-find ingredients, loaded with tender chicken bites, carrots, onions and that amazing curry flavor. My family calls it love in a bowl. It’s perfect for cold and blustery autumn days, but I’ll be honest, around here we think it’s perfect on any day.

 

Serve it up with crusty bread, and a healthy salad. Bon Appetit!

 

Favorite Chicken Curry Soup

INGREDIENTS:

6 Tablespoons Unsalted Butter

2 cups finely chopped Onions

2 Carrots, peeled and chopped

2 tablespoons Curry Powder (or more, I use lots more!!)

8-9 cups Chicken Stock (oh I know you can make this, but I just use pre-made stock)

6 sprigs Parsley (I only use this if my garden has them)(I’m a naughty cook, and don’t follow recipes to the letter)

1 Chicken, 2 -3 pounds, quartered {I don’t do whole chickens, so I use chicken tenders for this part, cut up! You go ahead and wrestle with the chicken if you want}

{or- buy a roasted chicken and shred!}

1/2 cup long grain Rice (not instant)

Salt and freshly ground Pepper to taste

10 oz. frozen Peas (okay, I just dump some in!)

 

DIRECTIONS:
1. Melt butter in a large soup pot. Add onions, carrots and curry powder, cook over low heat, covered, until vegetables are tender, about 25 min, stir occ.

2. Add stock, parsley, chicken and rice. Bring soup to a boil, reduce heat, and cover. Cook at a simmer until chicken is done, 25 to 30 min.

3. Add defrosted peas and simmer soup another 15 minutes. (again, naughty me, I throw them in frozen) Season with salt and pepper.

This is very good. I always make this when someone I love has a cold or the flu, put it in a slow cooker and take it over. It’s the best “sorry you’re sick”soup.
