I haven’t always been a fan of Turkey Burgers. But I have to say, that these are super easy to make, moist, and delicious! They are perfect for weekday meals, or for special cook-outs for holidays. Bonus: they are lean, and low in calories and fat. hooray!

Be sure to try the Muffletta Salad, spoon a little on the side, or on top of your burger. Yum!

Turkey Burgers:
1 lb. lean ground Turkey
1 egg, slightly beaten
1/2 cup Italian Breadcrumbs
1/2 cup shredded Cheddar Cheese
Seasoned Salt to taste
Pepper to taste
In a bowl, mix the beaten egg, the breadcrumbs and the cheddar cheese, then add the ground Turkey.
Season to taste. Use you hands to mix gently. Form into 4 patties. {although I make more smaller patties} Grill or broil the patties until cooked through but still moist,
3-4 minutes on each side.
Muffletta Salad
1/2 cup sliced red & yellow peppers {I use frozen ones from Trader Joe’s in a pinch}
1/2 cup pitted olives {canned, or fresh from the market’s Olive Bar}
1/2 cup diced artichoke hearts {I use the ones in a jar and add some of the juice to the mix}
1 garlic clove, minced
1/4 cup parsley, chopped
2 Tablespoons olive oil
2 teaspoons good balsamic vinegar
Juice of 1/2 fresh lemon {1 tablespoon}
Kosher salt and freshly ground black pepper
In a large bowl, combine peppers, olives, artichoke hearts, parsley, garlic, olive oil,balsamic vinegar, and lemon juice, season with salt and pepper, and set aside at room temperature.
This is great on any barbequed meat or fish, too!

Thank you so much for the recipes! I know my turkey burgers sometimes come out dry…it looks like the cheese in this recipe keeps them moist, I’ll give this a try, definitely. And your Muffletta Salad sounds delish! Just in time for the holiday weekend. I hope you have a good one!

I saw a old post of yours about Tara Frey’s book. Did she fall off of the face of the blogging world? I just don’t know what happened to her after awhile she blogged less and less and now she’s gone. Can’t even access her old blog, either.
